It also provides the freedom to play with new flavors and aromas; different types of herbal extractions, distillations, macerations, aging techniques and more. We began work on 'TWO' in 2017 when we were gifted some freshly foraged chaga
purity and strength
which represent 15% of the winery’s production
The agave is carefully trimmed of its pencas (or leaves) to avoid any bitterness
